Step-by-Step Instructions:
Blister the tomatoes: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the whole cherry tomatoes. Sauté them for about 5 minutes, stirring occasionally, until they start to soften, brown, and burst.
Build the aromatic base: Add the minced garlic and tomato paste directly to the tomatoes. Stir well and cook for 1-2 minutes until fragrant and the tomato paste darkens slightly.
Add the orzo and liquids: Pour in the uncooked orzo pasta, Italian seasoning, and vegetable broth. Give it a good stir, making sure no orzo sticks to the bottom.
Simmer until al dente: Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer for about 8-10 minutes, stirring frequently, until the orzo is al dente and has absorbed most of the liquid into a creamy sauce.
