Ingredients:

  • 1 cup uncooked orzo pasta

  • 2 cups whole cherry or grape tomatoes

  • 2-3 tbsp olive oil

  • 3 cloves garlic, minced or pressed

  • 2 tbsp tomato paste

  • 1 tbsp Italian seasoning

  • 2 to 2.5 cups vegetable broth

  • 1 can (15 oz / 400g) chickpeas, drained and rinsed

  • 2 large handy fresh baby spinach

  • Salt and black pepper to taste

  • For serving: A dollop of vegan sour cream or unsweetened Greek yogurt, and fresh herbs.

Step-by-Step Instructions:

  1. Blister the tomatoes: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the whole cherry tomatoes. Sauté them for about 5 minutes, stirring occasionally, until they start to soften, brown, and burst.

  2. Build the aromatic base: Add the minced garlic and tomato paste directly to the tomatoes. Stir well and cook for 1-2 minutes until fragrant and the tomato paste darkens slightly.

  3. Add the orzo and liquids: Pour in the uncooked orzo pasta, Italian seasoning, and vegetable broth. Give it a good stir, making sure no orzo sticks to the bottom.

  4. Simmer until al dente: Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer for about 8-10 minutes, stirring frequently, until the orzo is al dente and has absorbed most of the liquid into a creamy sauce.

  5. Boost the nutrition: Stir in the drained chickpeas (for protein) and the fresh baby spinach (for veggies). Cook for another 1-2 minutes on low heat until the spinach is wilted and everything is heated through.

  6. Season and serve: Taste and season with salt and freshly cracked black pepper. Ladle into bowls, top with a dollop of creamy plant-based yogurt or sour cream, and enjoy hot!

Quick Tips for Success:

  • Keep them whole: Do not chop the tomatoes beforehand! Leaving them whole allows them to steam and burst naturally in the pot, which creates a much deeper, sweeter flavor profile for the sauce.

  • Watch the liquid: Orzo behaves a bit like risotto rice—it loves to absorb liquid. If the pasta is not quite cooked through but the pot looks dry, simply add another 1/4 cup of vegetable broth or water.
